Behind the scenes images of the UP Commissary Department, through the UP Commissary building in Denver, Colorado and the kitchens and dining cars of UP’s famed passenger dining service in the mid-20th century. This looks at how food was supplied to and stored in the commissary building, its loading into dining cars, preparation in kitchens on board, and final delivery to your plate.
